Just the aroma of this cake while it bakes will have you ready for the Holidays.
1 egg beaten
1 cup raw sugar or sucanat
1 3/4 cups whole wheat pastry flour
1/4 teaspoon Sea Salt, optional
1 teaspoon baking soda
1/2 cup canola oil
1 cup water
1 teaspoon cinnamon powder
1 teaspoon nutmeg powder
1 teaspoon allspice powder
1/2 teaspoon clove powder
1/2 cup walnuts or pecans (or both), coarsely chopped
Pre heat oven to 375. In a large mixing bowl, add sugar to beaten egg. Mix well. Add oil and water, beat again. Into a separate bowl, sift all dry ingredients (except nuts) and blend. Add dry to wet ingredients and mix. Fold in chopped nuts. Pour into an oiled 9×12 pan. Bake for 25-30 min or until firm in the middle. Cool on a rack before icing and or cutting.
